MoFo Day 4: Chickpeas & Broccoli

Part of my challenge for this month, besides posting every day, is to try and use up a food from my pantry, refrigerator, and freezer. I did cheat a little and buy some tamari and nama shoyu, but a life without soy sauce is no life I want to live. When I run out of chickpeas, or you’ll hear me sobbing all the way in New Zealand.

Tonight I sacrificed a huge can of garbanzos and made a double batch of 40 Clove Chickpeas and Broccoli from Appetite for Reduction. On days when I get home late and I want to eat NOW, but don’t want to eat cereal for dinner again, this is on the table in under an hour and is a nice complete meal. I usually have everything I need to make this in the house. It’s also great over quinoa, especially if you add a little extra broth to the pan.

This is definitely one of my favorite cookbooks for quick, healthy, and completely delicious meals. Sometimes I make triple batches of Green Goddess Dressing and plan meals around it. I also love that it’s a cookbook I can hand to anyone because pretty much all of the ingredients can be found in a regular grocery store. It’s definitely worth a look if you don’t already own it!

    I love this dish too, but I almost never have broccoli on hand. I agree about the book, it’s awesome.

    love this recipe, and this book! i agree, this book is so accessible and regular grocery friendly i wouldn’t hesitate giving it to anyone interested in cooking with vegetables.
