MoFo Day 18: Roasted Cabbage with Lemon
I was planning on making the Roasted Cabbage with Lemon recipe I found over at Kayln’s Kitchen for Pinterest Wednesday, but when I forgot that I bought a head of cabbage, then ordered 2 pounds from my produce delivery, I suddenly found myself needing to cook a lot of cabbage, quickly.
I brushed the slices with 1 tablespoon of oil whisked with 3 tablespoons of lemon juice, then sprinkled them with garlic powder, salt, and pepper.
The next time I make this, I’ll leave the core attached, and just cut it away after cooking. I had one heck of a time turning these without the leaves coming apart.
This recipe was so easy, and so delicious. I let Carl try a few pieces, then I could barely take two shots before he wanted to attack the platter. I’d never thought to roast cabbage. The edges get crispy and caramelized, while the inside gets sweet and meltingly tender. I still have two heads of cabbage in the fridge, so I’ll definitely be making this again, and very soon!
