Vegan MoFo Day 31: Halloween Enchiladas
Well, I didn’t quite get to post every day this month, but I did post way more than last year or the year before. I posted 28 out of 31 days, and I’m pretty proud of that. I’m okay, other than a little whiplash, but my car slipped on the ice this weekend, wrestled with a tree, and lost. I was feeling a little miserable, so I ended up pounding a fancy soda, half a sleeve of accidentally vegan cookies, and passing out in sugar coma... Read More
MoFo Day 28: Banana Split Ice Cream
I really needed a night off yesterday. I have a lot of deadlines at work, and put in over 50 hours this week. I could barely make myself dinner last night, and I didn’t think anyone wanted to see a bowl of reheated greens and Gardein, even though it was tasty. I did get 7 glorious hours of sleep, and almost felt like a normal person today. I’ve been thinking about the recipe for banana split cashew ice cream that Dawn posted at veg-am... Read More
MoFo Day 26: Ella’s Wood Fired Pizza
We went to see Ani DiFranco perform at 6th & I tonight, so we decided to meet up for dinner at Ella’s Wood Fired Pizza, which has several vegan options, including lightly applied vegan cheese. I suspect it’s Daiya, which I like, but I do appreciate a light hand with it. We started off with a spinach, strawberry, and candied almond salad, which was sprinkled with coarse sugar. It sounds weird, but it was actually really good! My pizza... Read More
MoFo Day 25: Pokez
Work has been kicking my butt a little lately, so I’m doing a little vacation flashback. Pokéz was heartily recommended when I mentioned I’d be in San Diego for a few days. I went with my sister-in-law and enjoyed this enormous platter of food. It was so inexpensive, I ordered two potato and chorizo enchiladas with rice and beans, thinking it would be just enough food. This huge platter was enough for two very filling meals. Share: Read More
MoFo Day 24: Simple Supper
I ended up working really late, so tonight’s dinner was really quick and easy. Honestly, when it isn’t MoFo, a lot of my meals are like this. Some tofu, tempeh, seitan, or beans, and a vegetable or two. Tonight I baked some tofu marinated in mango puree, pineapple juice, ginger, coconut, tamari, garlic, and sesame oil, drizzled with Sriracha, and served alongside some sauteed kale. Not pictured are the hummus and crackers I had before,... Read More
MoFo Day 23: Pumpkin Spice Doughnuts
I saw these Pumpkin Spice Doughnuts on Oh She Glows a few months ago, but didn’t make them until this weekend. I had just enough pumpkin left over from my Pumpkin Chocolate Chip Ginger Muffins for a batch. I only have one mini doughnut pan, so I made the rest as holes. These little treats have a delicate crumb, and are nicely flavored with pumpkin pie spices. Don’t skip the cinnamon sugar coating! The only change I made was to use caramel... Read More
MoFo Day 22: Sabai Sabai Simply Thai
We enjoyed lunch at Sabai Sabai in Germantown this afternoon. First we nibbled on crispy vegetable spring rolls Then we shared Tofu Ginger Stir Fry and You Think It’s Duck Curry (I thought it tasted more like delicious) Afterward we headed off for a long hike to enjoy the fall foliage, and the sun finally decided to break through the clouds. See you tomorrow! Share: Read More
MoFo Day 21: Oh, Crepes!
I remember crepes being one of the few things I actually liked at iHop. They were served with lingonberry jam and powdered sugar. Then, I had crepes on my very first vacation with Carl nearly 7 years ago. We were in Paris, also a first, and I bought one from a cart. It was January, so the air was cold, but the warm, soft, and chewy crepe warmed my hands as the chocolate and banana melted into it. I like pancakes, but I love, love, love crepes, so... Read More
MoFo Day 20: Tom Yum Takeout
I was feeling a bit awful today, spent most of the day today sleeping on the sofa, and wasn’t going to post, but I’ ve come so far and didn’t want to break my streak. I was so happy that Carl brought home this Tom Yum from En Bistro. I asked several servers, several times if the vegetarian version has any fish sauce, chicken brother, shrimp paste, or anything else that isn’t vegan, and have been assured that it is safe. I’m... MoFo Day 19: Easy Yeasted Bread
It’s Wednesday, so it’s time for a recipe from Pinterest. I decided to make the Easy Little Bread Recipe I’ve been eying from 101 Cookbooks. Heidi’s blog was one of the first food blogs I read, and I continue to enjoy the way she makes simple, wholesome ingredients look and taste so good. I was really attracted to this bread because of how easy it seemed to put together. Even though I’m easily distracted, especially after... Read More
MoFo Day 18: Roasted Cabbage with Lemon
I was planning on making the Roasted Cabbage with Lemon recipe I found over at Kayln’s Kitchen for Pinterest Wednesday, but when I forgot that I bought a head of cabbage, then ordered 2 pounds from my produce delivery, I suddenly found myself needing to cook a lot of cabbage, quickly. I brushed the slices with 1 tablespoon of oil whisked with 3 tablespoons of lemon juice, then sprinkled them with garlic powder, salt, and pepper. The next time... Read More
MoFo Day 17: Rings of Fire
I’d picked a song for Music Monday, then I was browsing the MoFo blog and came across La Vida Vegga’s post for delicata squash rings, which led me to Kittee’s post. Immediately, Johnny Cash’s “Ring of Fire” popped into my head, and it’s been stuck there all day. I like Johnny Cash, so that isn’t such a bad thing. Ring of Fire Roseanne Cash says that “Ring of Fire” is about the tranformative... Read More
MoFo Day 16: Sunday Brunch
Carl and I enjoyed a lovely, relaxed brunch this morning at our favorite local vegan restaurant, Great Sage. We started with a bowl of smoky black bean soup. Then, I ordered the breakfast burrito, which is filled with tofu scramble, roasted potatoes, tempeh bacon, and a spicy sauce. It comes with a side of vegetables, and today they were serving quickly sauteed zucchini, chard, and tomatoes. I could only eat half the burrito, so I’ll have a... Read More
MoFo Day 15: Flax Attack
I spent much of the day trying to decide how to use of some of my flax. The timing wasn’t right for waffles or pancakes, and reading all the pumpkin recipes popping up made me think about a quick bread or muffins. I found a recipe for Pumpkin Spice Bread over at Fat Free Vegan and decided to modify it. I was a little worried that I’d end up with bricks when I subbed flax and oat bran for so much of the flour, changed the sweeteners and... Read More
MoFo Day 14: Hump Day!
Photo courtesy of Kittee Burns It isn’t Wednesday, but we’re halfway through MoFo! There’s a new vegan dance hit by the lovely Leslie Hall aka Mother Gem fame sweeping across the vegan internet today. Check it out, put on your tight pants, and just try not to do some body rolls. Leslie wants to help us celebrate veganism, and all of this crazy hardwork we’ve been doing for MoFo, with an awesome as of yet unreleased song to... Read More
MoFo Day 13: Raw Mango Cheesecake
It’s Raw Food Thursday! I wanted to make a small dessert, so I soaked 1/2 cup of raw cashews on my way out this morning, and figured I’d plan around it. I have lots of frozen mango in the freezer, so I thought I’d look for a raw mango cheesecake. I found lots of recipes that I want to try later, but this berry cheesecake recipe at Chow Vegan seemed like the easiest to modify, and was already scaled to a reasonable size. I used some... MoFo Day 12: Breakfast Cookies
I had a hard time choosing a recipe from Pinterest for today’s recipe. I either didn’t have the ingredients, or they’d end up taking too long to make. Finally, I settled on these Carrot Cherry Breakfast Cookies because today I ate a freezer burned sandwich thin with vegan nutella. We really need to go food shopping. I realized that every single carrot I had in the refrigerator had given up, but I did have some sweet potatoes. I subbed... Read More
MoFo Day 11: Sushi Bowl
It’s Tuesday, so it’s time for a little pantry challenge! There’s a great recipe in Appetite for Reduction for a Sushi Roll Edamame Salad. As I was deciding what to make for dinner tonight, I wanted to make something similar, using only what I had in my pantry or refrigerator. I’ve been meaning to make inari for a while, but I didn’t want to make sushi for dinner, so I decided to toss everything into a bowl instead.... Read More
MoFo Day 10: San Francisco
We’re back home from a weekend roadtrip and a 9-hour drive today, so I’m doing a little flashback to my summer vacation today. After Vida Vegan Con, I met up with my sister-in-law for a quick trip to San Francisco. We were only there one full day and two nights, but managed to eat really, really well! After getting off the plane and finding our rental, we decided on takeout from Indian Oven, which my brother-in-law recommended. We were... Read More
MoFo Day 9: Dinner in Albany
Carl and I left Burlington today, but not before stuffing ourselves with more burritos, salad, and cupcakes. We stopped in Albany tonight, and decided to try out New World Bistro Bar, after seeing a menu posted on their website with lots of vegan options. We sat on the patio, and it was just too dark for photos. We decided to just split everything, since we’ve been full pretty much our entire trip. We started off with the Veggie Autumn Rolls....
